Cowboy Cookies!
Take your time but hurry up!
Ole Aunt Jenny and Aunt Tessy made these cookies among others every Christmas season.
They are just sweet enough to really stand up as cookies but the satiating oatmeal tricks you into eating them as a meal substitute (Dad, I think you know what I mean). Credit to goes to Jim for editing this 2011 recipe. Mom steals the show annually by perfecting several Cowboy Cookie batches which guarentee her flock/herd returns to the trough/pasture/manger,
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 1/2 cup flour
1 tspn soda
1/2 tspn baking powder
2 tspn vanilla
1 12 ounce chips
2 cups oats
1 cup nuts
Cream shortening and sugars
Add eggs
Sift dry ingredients and add to shortening mix
Add other ingredients
Drop on to greased cookie sheet
12 minutes at 350 degrees

Kimchi!
We recently met our friends from Paris and took them to Kelley and Ping, the Asian Fusion which has homemade pickles, including Kimchi, on the menu. The Kimchi comes in its own personalized jar, Lovely, I could not stop eating this Korean staple. So now of course we want to try and make our own. Here is the recipe H and I will try tomorrow. H is my housemate who loves to cook and we trade Chinese and Italian favorites. Stay tuned for the taste test tomorrow.
