Sandwich Salad

This photo does not do this little salad justice.  Rinse some greens such as arugula and romaine. Cube some italian bread or a baguette. Heat the cubes in a pan to toast them into roughly croutons. A little soft but some crust.  While these are toasting mix a dressing of olive oil and balsamic, a dash of sugar and a small dollop of mayo. Toss the greens with the dressing
Add any other fixings such as thin sliced fennel, radishes, prosciutto, olives. (Insert imagination). Last toss in the hot bread cubes to make a soft wilt delicious dish.  Garnish with  cheese  last if you wish.
