Warm Quinoa Cauliflower Salad

This was delicious!

1/2 Head Cauliflower roughly chopped into bite size pieces.
Juice from 2 lemons
Oregano
Pepper
Salt
1 cup Quinoa
Olive oil

Toss the cauliflower, oregano, pepper, salt and lemon juice in enough olive oil to coat.
Roast these veggies in a 400 oven for 10-15 minutes (let it brown a little).
The smaller you cut the pieces, it will cook faster.

Bring 2 cups water to a boil, add the quinoa. Cook for 10 minutes. Remove the quinoa from heat and strain. Put the quinoa in a colander lined with a towel or cheese cloth. Steam the quinoa for 10 more minutes or until they are fluffy. Grains should have soft centers. Toss the cauliflower and quinoa together--Enjoy.

Possible variations, add raisins, kale strips, red pepper and chick peas. . . etc.

Aspartame

Please take a moment to take up cause on restrictions of Aspartame here,

Aspartame in Milk

This is the FDA public comment period for allowing Aspartame into cow's milk as s sweetener.

My personal experience with Aspartame, in a nutshell,

If I eat something with aspartame in it, say diet Snapple, yogurt, gum, I get diarrhea. Plain and simple. If I eat, regular Snapple, yogurt w/out Aspartame (currently there are several, and it's clearly stated as an ingredient), or another sugar free gum-- my stomach is fine. This is one of the few foods/food additives that upsets my stomach. People, I write a food blog, where my GI tract is the laboratory. It's pretty resilient.

Take a look at the Aspartame issue and decide for yourself. Here are a few other sources reporting on the FDA/Aspartame response.Thank you.

  1. Gender dimorphism in aspartame-induced impairment of spatial cognition and insulin sensitivity.

Our Global Kitchen - on Display

Take time to visit the American Museum of Natural History Exhibit - Our Global Kitchen. At first the walk through displays read like typical conservationist, awareness, sustainable language, but as you move through a larger message reaches visitors on several levels. Most people think about food, at meal time, or in anticipation of meal time. This exhibit clearly illustrates how food intertwines with a majority of our day.

Personal favorites were,

- An interactive cooking table. The table was one big video display with an overhead view of the work right in front of you.

-Wall of historic cookbooks!

*Sushi rice:
Cooked rice with a 1tsp salt; 1tsp sugar; 1tsp rice wine vinegar, toss to coat.

Homemade Mayonaise

I found this recipe, delicious! Fair warning, the garlic will be strong! Olive oil stands up nicely. You may prefer to rewhip this after 1-2 days.
