Fancy Soybean Salad

This salad has been a "vegetarian" hit at family parties lately. It's really just a salad that's made with only plants! Anyone can eat it!

2 cups of cooked rice.  
          Can be any type of rice, or barley, bulgar wheat etc. Mary-Ellen, who invented this recipe uses the Trader Joe's Brown Rice Medley. It's worth noting the blend combines brown rice, black barley, and daikon radish seeds. Even on its own, delicious!

1 pkg/ approx 2 cups of edamame (soybeans)
1 cup raisins
1 cup alomds, roughly chopped or slivers
2 scallions 1/4 inch slices
1/2 cup olive oil
1/4 cup rice wine vinegar
1 tbs of sesame oil
1-2 tbs honey
salt and pepper possible sugar to taste.

Cook and cool the rice, toss with raisins, almonds, scallions and soybeans.
Whisk the oils and rice wine vinegar, honey. drizzle over salad mixture and toss.
Season to taste.
