Glamorous Peasant Lunch


Today's sunny day demanded lunch at the "French bistro" table on the deck.

Here's the recipe,
4 flour tortillas warmed in a pan
chopped raw spinach leaves
grated Swiss (or any other cheese)
tahini

 Layer one tortilla in the pan with a generous heaping of spinach and cheese,
follow with the second tortilla, press down on the sandwich to melt the cheese and wilt the spinach.
Flip and repeat. You may want a dab of oil in the pan beforehand.
Cut crosswise to make four pieces. Drizzle with tahini.
